Through my transition from white to Oat Flour, I’ve created Oat Flour Recipes, Oatmeal pancakes, muffins & more! Enjoy “Oats 8 Ways” with these easy-peasy simple recipes all while making your own Oat Flour!
Oat Flour Recipes, Oatmeal Pancakes & Muffins | Oatmeal Benefits
OAT FLOUR
Pre-made Oat Flour of course can be purchased, however why not make your own oat flour?
Making oat flour is simple, add your purchased whole grain old fashion oats to a food processor and grind/blend until fine.
You may use any brand of oats, I enjoy “Quaker Oats” and enjoy making my flour with this “Ninja Food Chopper” It’s seriously, so simple!

It’s beneficial to your heart, digestive system, as well as providing energy.

INGREDIENTS WE WILL BE USING:
Old Fashion Oats | Granulated Brown Sugar | Canned Pumpkin | Prunes | Salt | Baking Powder | Olive Oil | | Vanilla Extract | Plain Greek Yogurt | Yellow Mustard | Honey | Fresh Blueberries | Egg

FOOD PROCESSOR | MUFFIN TIN | ROLLING PIN | PANCAKE PAN OR GRIDDLE
….and alright folks, let’s make turn some Oats into 8 Simple Recipes!
1. OATMEAL NAKED PANCAKE
This will be your simple base pancake. This is a nice basic pancake that can be altered many ways
1 cup oats
2 tbsp. brown sugar
dash of salt
1/4 tsp. baking powder
3/4 c. milk
1tsp olive oil
DIRECTIONS:
-Grind Oats in Food Processor
-Add Dry Ingredients. Mix All
-Add Milk and Oil. Mix All
Pour Pancake on Griddle or Pan and Brown as desired.
I enjoy topping fresh fruit and honey
(creates two pancakes)
2. OATMEAL PUMPKIN PANCAKES
This pancake includes the superfood pumpkin!
Pumpkin has many health benefits for your heart, can lower your blood pressure, improves digestion, improves skin & hair, boosts your immunity, and can ease anxiety.

1 cup oats
2 tbsp. brown sugar
dash of salt
1/4 tsp. baking powder
3/4 c. milk
1tsp olive oil
2 tbsp. canned pumpkin
dash of pumpkin pie spice (optional, I prefer mine without it)
DIRECTIONS:
-Grind Oats in Food Processor
-Add Dry Ingredients. Mix All
-Add Milk, Pumpkin and Oil. Mix All
Pour Pancake on Griddle or Pan and Brown as desired.
I enjoy topping mine with brown sugar and a slight dusting of salt to provide that salty/sweet taste!
(creates two pancakes)

3. OATMEAL PRUNE PANCAKES
I know what you are thinking, prunes?? Yes prunes!
Prunes are so beneficial to our health, they provide fiber to help with constipation, improves vision, is loaded with potassium which helps lower blood pressure, helps prevent heart disease, heart attack and stroke! So enjoy the benefits of prunes!

1 cup oats
2 tbsp. brown sugar
dash of salt
dash of pumpkin pie spice (optional, I prefer mine without it)
1/4 tsp. baking powder
3/4 c. milk
1tsp olive oil
8 Prunes (I LOVE these single packaged prunes simply because they seem fresher and juicier)
DIRECTIONS:
-Grind Oats in Food Processor
-Add Dry Ingredients. Mix All
-Add Milk, Prunes, and Oil. Mix All
Pour Pancake on Griddle or Pan and Brown as desired.
I enjoy garnishing with whole prunes to give that extra bite of juiciness!
(creates two pancakes)

4. OATMEAL SAND DOLLARS
These little finger food size pancakes are super cute for the little ones or as a snack!
You will want to add a little more milk as needed to make them slightly thinner than the other pancakes listed
1 cup oats
2 tbsp. brown sugar
dash of salt
1/4 tsp. baking powder
3/4 c. milk
1tsp olive oil
2 tbsp. canned pumpkin
dash of pumpkin pie spice (optional, I prefer mine without it)
-Grind Oats in Food Processor
-Add Dry Ingredients. Mix All
-Add Milk and Oil. Mix All
DIRECTIONS:
-Pour Pancake on Griddle or Pan and Brown as desired.
(we really enjoy using our Cuisinart Griddle Grill, it converts to a grill and a pancake griddle!
….oh and it makes waffles too!
-I enjoy a dusting of brown sugar
(creates two pancakes)
5. OATMEAL BLUEBERRY MUFFINS
These are simple little blueberry muffins full of fiber, protein and the super-food blueberry!
We enjoy using them as a lunch substitute while traveling on our journeys!
1 3/4 c. oats made into oat flour using your food processor
2 tsp baking powder
1/4 tsp salt or a dash of salt
1 egg
1/2 c. granulated brown sugar (can use white if you prefer)
1/2 milk
1/4 c. olive oil
1/4 c. plan greek yogurt
1 tsp vanilla extract
1/2 blueberries or to taste tossed in oat flour
DIRECTIONS:
-Preheat oven to 425 degrees.
-Grease a muffin tin
-In a large bowl combine oat flour, salt, baking powder
-In a smaller bowl combine egg, milk, oil, sugar, and greek yogurt
-Mix dry and wet ingredients together, gently stir
-add blueberries, stir in gently
-Use a scoop to fill each muffin hole to 1/2 to 3/4 full
-Bake for 5 minutes at 425, then lower your heat to 375 degrees and bake 16 minutes longer
-Remove muffins from oven, let them rest for about 15 minutes.
(makes 12 muffins)
6. OATMEAL DOUGH DIPPERS w/ GREEK YOGURT DIPPING SAUCE
These little crips can be cut to any shape, however I love a little triangle shape, perfect for dipping
(fun tip:that beautiful subway tile featured throughout; learn how to create it in our DIY GUIDE) ok….back to oats 8 ways
1 c. oat flour (created in your food processor)
1/2 c. plain greek yogurt
2 tables. olive oil
pinch of salt
DIRECTIONS:
-Mix all of the ingredients together
-Kneed dough on floured surface (if too wet add more flour, if too dry add water)
-Let dough rest wrapped in plastic cling wrap for about 20minutes
-Roll dough, cut triangles with a pizza cutter
-Brown in olive oil drizzled pan
GREEK YOGURT DIPPING SAUCE
This Mixture is “To Personal Taste, Add or Subtract as Preferred”
1/4 c. plain greek yogurt
1tsp to 1tblsp yellow mustard
splash of milk
splash of olive oil
-Mix all to create a tangy dipping sauce
7. OATMEAL GRAVY
This gravy will make you feel like gravy is ok, it’s full of oatmeal and healthy!
The Ingredients will depend on how much gravy you are looking to make.
We only have a family of two, so I use:
1/3 c. oat flour (made in your food processor)
1 tbsp olive oil
dash of salt
milk until smooth
-I have found this is easiest in the microwave, however it can be made on the stove top as well.
-Heat per 1minute in microwave adding milk or water as needed to desired consistency
I love this on chicken, rice, mashed potatoes, or even pancakes!
8. BASIC BOWL OF OATMEAL
Last but not least is your basic bowl of oatmeal. This provides a quick easy bowl of goodness to keep your tummy full and healthy!
1/2 c oats (not oat flour, keep your oats whole)
1 c. water or milk
dash of salt
sugar to taste
fruit toppings as desired
-Bring water or milk to a boil
-Add Oats and Salt
-Cook for about 5 minutes, continue to stir
-Top with fruit, sugar, or honey as desired

Hi, in the oatmeal dough dippers recipe there is baking powder in the picture, but not in the recipe list. Does the recipe need baking powder, and if so how much? Thanks : )

Oooops, I am so sorry…I totally placed the wrong picture with the Oatmeal Dough Dippers.
This recipe does “not” include baking powder. Thank you bunches for pointing this out to me.
I will be replacing that picture asap! Do indeed give the dippers and dipping sauce a try, they are super yummy!
You could also season as you’d like…I tend to like milder tasting food, however some may prefer a little spice added in.
